NEW RECIPE: “Los Tacos De Excelente”

• 2 corn tortillas (small)

• 3 sprays of coconut oil spray

• 1 & 1/2 cups of small, cooked & peeled shrimp

• 2 teaspoons of garlic powder

• 1 & 1/2 teaspoons of salt

• 2-3 teaspoons of green onion

• 2 large eggs

• 1 & 1/2 tablespoons of Colby Jack cheese

• 1 teaspoon of season-all seasoning

~ In two separate skillets spray the recommended amount of coconut oil

~ Add your shrimp on a medium low fire

~ As your shrimp sizzles and gains more color add your garlic powder, salt, and green onion

~ In the other skillet begin heating heating your tortillas on a low fire

~ When all of your ingredients in the previous skillet are sizzling, your shrimp have shrunk somewhat in size, and your seasoning is beginning to stick to the pan add both of your eggs

~ Add your cheese (slice your cheese to your desired width) (NOTE: I used a corner from a block of Colby Jack and just had fun slicing it. No biggie.)

~ Once the eggs have been added set your fire on a low heat

~ Let both pans cook on a low fire for 2-3 minutes

~ Once the eggs have cooked turn off both skillets

~ Stir all the ingredients in the egg skillet

~ Sprinkle your season-all in a freeing fashion (lol, play chef it’s your kitchen)

~ Place your tortillas on a plate add your egg mixture

Pairing Suggestion: A bowl of piping hot grits
